We always have it on New Years because it can be a side dish or relish type dish to serve with chips (scoops work best). So we have it New Year's Eve and again on New Year's Day. <br />The multi-color vegies make this a real colorful dish. Use yellow, red and green bell peppers to add more color. Use Balsamic vinegar if you can, much more flavor, Apple Cider if you have to. Same thing with the black eyed peas use fresh or frozen before canned, flavor is much better.
